Each crop you plant and harvest has three stars or levels attached to it and completing each level will provide you with more and more XP and coins. After completion of the third you get a sign representing that plant to put on your farm which is not only decorative but also a bragging item to show your progress. All the points and coins you gain depends on the particular crop and the star level. I find being part of a co-op great because it ensures I stick to one sort of crop or at least only a few and then I reach my mastery points faster. You can watch your progress by opening up the market and looking at your star colours (yellow for achieved star) and the bar underneath it.
Keep in mind the FarmVille clue of trapping your avatar away so that you can plant and harvest quickly without the little fella traipsing behind slowly and holding you up. Also remember that you need to be at level 10 to start your mastery play. Below is a list of points and coins you can receive at each level from lowest to highest.
